Toffee Stuffed Doughnuts

5 cups vegetable oil for frying
1 cup milk
1 egg
2 cups cake flour
4 and half teaspoons baking powder
2 teaspoons white sugar
half tsp salt
quarter cup butter, melted
200g Melissa's Mix Bag of toffees, paper removed
Icing sugar for dusting


  1. Heat the vegetable oil to 180°C in a large heavy based pot.
  2. Line a baking sheet with paper towel.
  3. In a small bowl whisk together the milk and egg.
  4. In a separate bowl, mix together the flour, sugar, baking powder and salt.
  5. Stir the milk egg mixture into the dry ingredients, then stir in the melted butter, mixing until a soft dough forms.
  6. Once the oil has reached it's temperature, use two small spoons to scoop the dough into a ball. Press one toffee down into the raw dough on the spoon. Use the other spoon to cover the toffee with dough and drop into the oil.
  7. Dip dough balls into the oil and fry for about 2 minutes or until golden brown and cooked. Careful not to overcrowd the pot.
  8. Once cooked remove from oil and transfer the doughnuts onto the baking sheet with paper towel.
  9. Carry on with the process until all doughnuts are fried.
  10. Allow the doughnuts to cool and dust with icing sugar.
