Creamy Tomato Mussel Pot

1.5kg fresh clean mussels
2 tbsp Melissa's Everyday Cooking Olive Oil
2 onions, finely chopped
840g Melissa's Tomato Pasta Sauce
250ml cream
2 tsp salt
¼ cup parsley, finely chopped
1 loaf bread, sliced & toasted


  1. Heat the oil in a large pot.
  2. Cook the onions until soft and caramelised.
  3. Add in the mussels.
  4. Add the cream and tomato sauce.
  5. Put the lid on and stir once or twice.
  6. Once all the mussels are open the dish is done. Discard off any mussels that won’t open.
  7. Garnish with parsley and serve with hot toasted bread.
