Caramelized Pear Pavlova

1 medium Melissa's Pavlova
½ jar Melissa's Bottled Pears, with syrup
¼ cup Almonds, roasted and roughly chopped
¼ cup Pistachios, roughly chopped
1 cup cream
1 cup yoghurt
1 tsp castor sugar
1 cup water


  1. Reduce the pears with syrup over medium heat until it has a caramel colour.
  2. Cool down the pears and slice.
  3. To make the cream mixture, whipped the cream and sugar together until stiff and fold into the yoghurt.
  4. To make the caramel, dissolve the sugar in water and cook over medium heat until it has a caramel colour. Keep a cup of water and brush close by to brush down the sides of the pot to stop the mixture from crystallizing. Do not stir the mixture with anything.
  5. Just before serving, top the meringue with the cream mixture, decoratively arrange the pears, top with nuts and drizzle the caramel.
Make the caramel sauce just before serving.
