Tipsy Tart with ‘Kaapse Jongens’

125ml boiling water
500g Melissa’s Kaapse Jongens
2.5ml bicarbonate of soda
60ml butter
100g brown sugar
1 egg, beaten
140g flour sifted
2.5ml baking powder
1 pinch salt
2.5ml ground cinnamon
2 tbsp crystallized ginger, chopped finely
1ml nutmeg
1 orange, zest
100g brown sugar
2 tsp butter
5ml ground cinnamon
75ml syrup from Melissa's Kaapse Jongens
75ml Brandy
1 pinch salt


  1. Preheat the oven to 180°C.
  2. In a saucepan bring the water and the 'Kaapse Jongens' to a boil.
  3. Remove from the heat, add the bicarbonate of soda and mix well. Set aside to cool.
  4. In a mixer cream the butter, sugar and egg until light and airy.
  5. Add the flour, baking powder, salt, cinnamon, crystallized ginger, nutmeg and fold into the butter mixture.
  6. Add the 'Kaapse Jongens' mixture and orange zest.
  7. Place in a buttered pan.
  8. Bake for 30-40min until cooked and golden brown.
  9. Bring all the ingredients for the brandy sauce to a boil and pour over the tart when it comes out of the oven.
Serve with leftover 'Kaapse Jongens'
