Savoury Tomato Jam Biscuits

200g butter (room temperature)
135g flour
2 pinches salt
1 tsp cayenne pepper
1 tsp paprika
2 tsp Melissa’s Everyday Rub
50g mature cheddar, grated
50g parmesan, grated
1 egg, beaten
30ml Melissa’s Tomato Jam


  1. Pre-heat the oven to 180°C.
  2. Rub the butter into the flour using your fingertips until it resembles the texture of breadcrumbs.
  3. Mix in the rest of the ingredients except for the jam.
  4. Layer a sheet pan with baking paper.
  5. Roll the dough into truffle sized balls, flatten slightly and make a finger indent in the middle.
  6. Fill up with tomato jam.
  7. Bake for about 10-15min until golden brown.
  8. Serve warm or cold.
