Roasted Cauliflower Spread

Ingredients

1 cauliflower head, broken up into florets
5 tbsp Melissa’s Extra Virgin Olive Oil
2 tbsp Melissa’s Cook’s Sea Salt with Cracked Peppercorns
1 tbsp sour cream
2 tbsp milk

Method

  1. Preheat the oven to 180°C.
  2. Place the cauliflower in a roasting dish and drizzle with olive oil.
  3. Sprinkle with Melissa's Cook's Salt.
  4. Roast until soft and darken in colour. Toss now and then for a even brown colour.
  5. Blend all the ingredients in a blender until smooth.
  6. Garnish with soft herbs, a sprinkle of cook's salt and a extra drizzle of olive oil.
Note:
Can be served warm or cold with toasted rye bread.
