Banana Flapjacks

6 bananas
2 eggs
16 bacon rashers, pan-fried or baked in the oven
4 tbsp Mascarpone
4 tsp Melissa’s Guava Jam
4 tsp almonds, chopped roughly
4 tsp Melissa’s Raw Honey
8 mint leaves, sliced finely
Melissa's Everyday Cooking Olive Oil, for frying


  1. To make the flapjacks, mush the bananas and eggs together in a bowl.
  2. Heat 2 tbsp of oil in a non-stick frying pan over medium heat.
  3. Cook one tbsp of the banana mixture at a time. Flipping these beauties can be tricky so a small thin spatula is recommended. Check that the bottom is evenly crisp before you turn.
  4. Add more oil between batches.
  5. On a plate layer the bacon between the banana flapjacks.
  6. Top with guava jam, mascarpone, almonds, mint and a drizzle of Melissa’s Raw Honey.
