Baba Ganoush

3 aubergines, sliced in half, lengthwise
2 garlic heads, sliced in half, horizontally
2 tbsp Melissa’s Cook's Sea Salt with Cracked Peppercorns
½ cup Melissa’s Everyday Cooking Olive Oil
3 lemons, zest and juiced
1 handful parsley, chopped


  1. Preheat the oven to 180°C.
  2. Make diagonal slices into the aubergine.
  3. Rub in the cook's salt and olive oil.
  4. Add the garlic heads.
  5. Roast until the aubergine and garlic is soft.
  6. Scoop out the aubergine and the garlic cloves and mix with the rest of the ingredients.
  7. Add extra salt and pepper according to taste.
  8. Serve as a dip or spread.
